Jamon Iberico ham is made from the Spanish black pig, pata negra.
This wonderfully cured Iberian ham has been been cured from 30-36 months.
What is so special about this ham is that they allow these pigs to roam the oak forests and they consume the oak acorns.
Oak acorns have a distinctive flavor that translate to high marbling in the pig. The curing process takes place in Salamanca which has a perfect climate of the right temperature and dryness.
