Parmigiano-Reggiano is a type of hard, granular cheese that is made from cow's milk in the Emilia-Romagna region of Italy. It is known for its sharp, nutty flavor and is often grated or shaved over pasta dishes, soups, and salads. The name "Parmigiano-Reggiano" is protected by the EU, meaning that only cheeses produced according to specific guidelines and in a specific region of Italy can legally be called Parmigiano-Reggiano.
The production process is very traditional, no additive or colouring are allowed. It starts with raw cow's milk that is heated, curdled and separated into curds and whey. Then the curds are shaped and put in moulds for several hours under pressure. After that the cheese are placed in a brine bath for about 20 days, then moved to aging rooms where it will age for a minimum of 12 months, but often up to 36. Parmigiano-Reggiano is a versatile cheese and can be enjoyed on its own or as an ingredient in many dishes.
