The word OP simply means Oven Prepared. This cut, also known as Standing Rib Roast comes from the rib section of a steer, which is between the chuck roll and striploin.

Note that final weight of the meat can deviate + 10% from published weight.

Cooking Instrucitions for Tomahawk steak or OP (Oven Prepared) Ribs.

  1. Take the steak out from the fridge and let it acclimatise to room temperature.
  2. Dry the steak with paper kitchen towels and season the steak generously with salt.
  3. Place the steak on a wire rack / oven rack and let it marinade for 10 minutes.
  4. Prepare the wet seasoning for the steak as follows:
    1. Olive Oil
    2. Paprika Powder
    3. Black Pepper
    4. Crushed garlic
    5. Montreal Steak seasoning
  5. Apply the wet seasoning on the steak, rubbing it on all sides of the steak. Let it sit for 15 minutes.
  6. Preheat the oven to 200 degrees Celcious.
  7. Place the steak into the oven & turn the oven temperature down to 100 degrees celcious.
  8. Bake for 1 hour 20 minutes turning it at halfway through (roughly at the 45min point)
  9. Let it rest for 5 – 7 minutes (this allows the juices to rehydrate the entire steak)
  10. Pan fry the steak for 3 minutes on each side (in order to get the charring). You can use a skillet to get the nice lines but a normal pan is fine.
  11. Present and start slicing it up to serve.
