USDA Prime OP Rib ( 1 - 1.1kg)
The word OP simply means Oven Prepared. This cut, also known as Standing Rib Roast comes from the rib section of a steer, which is between the chuck roll and striploin.
Note that final weight of the meat can deviate + 10% from published weight.
Cooking Instrucitions for Tomahawk steak or OP (Oven Prepared) Ribs.
- Take the steak out from the fridge and let it acclimatise to room temperature.
- Dry the steak with paper kitchen towels and season the steak generously with salt.
- Place the steak on a wire rack / oven rack and let it marinade for 10 minutes.
- Prepare the wet seasoning for the steak as follows:
- Olive Oil
- Paprika Powder
- Black Pepper
- Crushed garlic
- Montreal Steak seasoning
- Apply the wet seasoning on the steak, rubbing it on all sides of the steak. Let it sit for 15 minutes.
- Preheat the oven to 200 degrees Celcious.
- Place the steak into the oven & turn the oven temperature down to 100 degrees celcious.
- Bake for 1 hour 20 minutes turning it at halfway through (roughly at the 45min point)
- Let it rest for 5 – 7 minutes (this allows the juices to rehydrate the entire steak)
- Pan fry the steak for 3 minutes on each side (in order to get the charring). You can use a skillet to get the nice lines but a normal pan is fine.
- Present and start slicing it up to serve.
