The vines are planted in fractured flinty limestone, with a ribbon of shallow but fertile soil which contributes to the mineral element characters in the wine.
Maximum care is taken to process the fruit gently to avoid over extraction, maintain vibrant fruit characters and soft acidity.
The wine had extended lees contact (approx. 18 months), between secondary fermentation and bottling.
