These meat is made with thinly sliced US beef shortplate, with thickness of 2mm. Great for a simple steamboat dinner or shabu shabu.

Shortplate is a cut of beef from the plate primal of a steer or heifer, which is located between the rib and the flank.

The shortplate is considered a less tender cut of beef than ribeye or tenderloin, but is still a flavorful and often less expensive option. The shortplate is used as an ingredient in traditional Japanese hotpot dish called shabu-shabu which involves cooking thinly sliced meats and vegetables in a pot of boiling water or broth.

The term "shabu-shabu" refers to the sound the meat makes when it is swirled in the hot liquid. The beef is cooked quickly in the hot broth, then typically dipped in a sauce before eating. It is often served as a communal dish and is considered a delicacy.
